SØDT is pronounced soot and is Danish for sweet.
SØDT makes traditional artisan breads and pastries alongside a range of original rye based recipes, developed and made exclusively by SØDT. We use natural ingredients and slow fermentation for extra depth of flavour. All our ingredients are sourced as locally as possible and we favour small producers.
We are passionate about real bread and delicious food.

BRUNSVIGER (MUSCOVADO GLAZED BREAD)

This is a treat that often the Danish bakers will get judged on. The brunsviger really is a kind of muscovado glazed focaccia, which is utterly morish. Best of course when served freshly baked. The size of a single brunsviger is approximately 22cm x 12cm x 3cm, which is enough for four hungry people.

There are two methods you can use to bake the brunsviger:

For best results take the brunsviger out of the freezer and allow to sit on a parchment lined baking tray at room temperature while preheating the oven. Bake at 180˚C for 12-15 minutes and allow to cool in the tray. Some of the glaze will trickle down the sides during baking, don't worry, there will be plenty left on top. If you forget to put the brunsviger in the oven immediately it reaches temperature do not worry, it will be fine sitting at room temperature for up to one hour before baking.

To bake directly from the freezer place the frozen brunsviger on a baking tray lined with parchment paper and bake in a preheated oven at 180˚C for 15 minutes, allow to cool in the tray.

The temperatures given are for a fan oven. A good rule of thumb is to add 20˚C for a conventional oven. I strongly suggest using an oven thermometer to ensure the correct baking temperature, especially if using an older oven. The pastries are not suitable for microwave ovens.

Ingredients: allergens, including cereals containing gluten, see ingredients in CAPITALS:  WHEAT flour (30.6%) (calcium carbonate, iron, niacin, thiamin), MILK (17%), butter (12.5%) (MILK), muscovado sugar, salt, yeast.

Keep frozen until ready to bake and use within 3 months of purchase.
