SØDT is pronounced soot and is Danish for sweet.
SØDT makes traditional artisan breads and pastries alongside a range of original rye based recipes, developed and made exclusively by SØDT. We use natural ingredients and slow fermentation for extra depth of flavour. All our ingredients are sourced as locally as possible and we favour small producers.
We are passionate about real bread and delicious food.





A firm Danish Christmas favourite with kids and adults alike. The direct translation is brown cakes. These crunchy biscuits are generally enjoyed with a glass of gløgg (mulled wine). Brunkager are available throughout December.

There are two methods you can use to bake the biscuits:

For best results take the biscuits out of the freezer the night before baking. Place them on a parchment lined baking tray, leaving a couple of centimeters between each biscuit. Cover the tray loosely with cling film and put in the fridge overnight. Bake straight from the fridge in a preheated oven at 180˚C for 8-10 minutes. Cool on a pastry cooling rack.

The biscuits can also be baked directly from the freezer in a pre heated oven at 180˚C. For this method allow 12-13minutes baking time.

The temperatures given are for a fan oven. A good rule of thumb is to add 20˚C for a conventional oven. I strongly suggest using an oven thermometer to ensure the correct baking temperature, especially if using an older oven. The biscuits are not suitable for microwave ovens.

Ingredients: allergens, including cereals containing gluten, see ingredients in CAPITALS:  WHEAT flour (36.1%) (calcium carbonate, iron, niacin, thiamin), butter (17.1 5) (MILK) muscovado sugar (11.2%), mixed peel (SULPHITE DIOXIDE), cinnamon, pot ash, golden syrup, almonds (NUTS), cloves.

Keep frozen until ready to bake and use within 3 months of purchase.
