Æbleskiver means slices of apple, which refers to the slice of apple that was in the middle when these treats were first made. The name has remained although now apples are rarely in them. This version is plain, lightly spiced with cardamom and with a hint of lemon. They get their distinctive spherical shape from being pan fried in a special pan. Æbleskiver are mostly eaten in the winter months, particularly up towards Christmas. They are generally served with icing sugar sprinkled over them and jam on the side. They are equally delicious with savoury fillings, such as a good ham, which is an excellent canapé.

The æbleskiver are already cooked and should be heated from frozen. Place the frozen æbleskiver in an oven dish, cover with foil and place in a pre heated oven at 210˚ for 15 minutes. Remove the foil and heat for a further 5 minutes. Serve warm.
